A closing, then an opening, then a long run at one address: that is the shape of David Uygur’s Dallas work. After Lola closed in 2009, Lucia opened in 2010 with Uygur and his wife Jennifer, and the restaurant became the clearest field for his approach. As chef-owner since then, Uygur has treated Lucia as a place for repetition, tightening, and control, where restraint carries as much weight as volume.
Where They Are Now
At Lucia in Dallas, the kitchen is organized around Italian cooking made from scratch. House-made salumi, handcrafted pasta, and expert meat curing sit at the center of the operation, giving the restaurant its most legible technical markers. The work here is built on time and accumulation rather than display, with flavor developed through process, not decoration. The menu follows the same logic: concise by design and stripped of filler. Rather than expanding outward, it holds its shape, asking each dish to do clear work in relation to the next. What results is a menu concerned with balance and sequence, not spectacle, and with a level of precision that rewards attention. A carefully curated wine list extends that same discipline beyond the plate.
