Before Debora Fadul became chef-owner of DIACÁ in Guatemala City, the work began in a family kitchen, where her grandmother set the pace: hands sourced, tasks assigned, attention trained on the room. “My kitchen story started early; my grandmother would source helpful hands, and I would observe and learn.” That early apprenticeship established the method that still underpins her cooking: watch closely, work with care, and build a restaurant around Guatemalan ancestral cuisine and endemic produce.
The Path
Early career work as owner at an outdoor creative catering business in Guatemala gave Debora Fadul a setting defined by adjustment, timing, and making things work in real time. She later became founder and chef at Mon Ceur Catering (2008–2018), where the demands of events shaped control, pace, and consistency. Those years formed the practical base for the more focused, rooted work that followed at DIACÁ.
The Work Today
At DIACÁ, the cooking is organized through six micro-seasonal menus, each built to frame everyday Guatemalan products through the theme, fleeting character, and flavors of its season. Debora Fadul uses that structure to keep the kitchen tied to what is available, rather than forcing ingredients into a fixed program, and the result is a sustainability-focused dining experience centered on Guatemalan ancestral cuisine and endemic produce. The restaurant’s in-house “Sensory Ecosystem” gives that approach a working method. “Using our in-house “Sensory Ecosystem,” we analyze fresh samples to inspire recipes.” Fresh product, producer conversation, and seasonal offer all feed the menu. At DIACÁ, the plate is built through exchange between cooks, growers, weather, and ingredient, with the recipe emerging from that back-and-forth. Opening the restaurant was also a statement about cultural value. “I gathered all my courage to open the doors to DIACÁ, our restaurant, to share the value within Guatemala.” That intent stays visible in the dining room, where ancestral knowledge, endemic ingredients, and seasonal change are treated as working material. The result is a place where Guatemala is not presented as abstraction, but through what is grown, cooked, and served.
