i. Biography
Derek Stilmann is the founder of Bar Kaiju in Miami’s Little River neighborhood, a monster-inspired cocktail bar located at The Citadel. He is a longtime Miami bartender with more than 14 years in hospitality, including work at Broken Shaker, Pawn Broker, The Sylvester, and The Champagne Bar before opening Bar Kaiju in late 2022 / early 2023.
