    The Path

    Apprenticeship at Hôtel de France in La Côte-St-André gave Dominique Gauthier the usual starting conditions of the trade: early service, strict standards, and the repetition that turns movement into method. The work was kitchen work before it was anything else, with discipline built day by day and technique learned through pace, timing and consistency. In Geneva, from 1990, Le Chat Botté at Hôtel Beau-Rivage became the next step in that progression. As second in command, Dominique Gauthier worked inside a more exacting service environment, where coordination, timing and composure were part of the daily brief alongside the cooking itself. From 2001, the scope widened again when Dominique Gauthier became executive chef and was in charge of the palace kitchens at Hôtel Beau-Rivage in Geneva. The role required technical control across a larger operation, with service demands and fine-dining standards both falling to the same kitchen. Through each stage, the constant was work at the stove, with attention to detail as the basis of the craft. Today, Dominique is chef of F.P. Journe Le Restaurant.
