Training in Culinary school in Cancún gave Edgar Torres the base line; what followed was a working education across front and back of house. He started as a waiter at local restaurants, then moved into cellar work at Villa Creek Winery in Paso Robles, California, where he worked as cellar rat. That shift matters in trade terms: service teaches rhythm, cellar work teaches patience, and both sharpen the eye for timing, repetition, and restraint. Crossing into Dubai as chef at Oberoi widened the scope of the work without changing the discipline required. In Chicago, Illinois, that discipline deepened at Alinea in Chicago, Illinois, first as commis and later as Head Chef at Alinea in Chicago, Illinois. The sequence shows accumulation rather than reinvention: each role added another layer of kitchen and cellar practice, building range through repetition and scale. Since 2007, that range has been folded into Bodega de Edgar, alongside Songs Wines and Vecino.
