Eelke Plasmeijer is a Dutch chef and co-chef-owner of Locavore NXT in Ubud, Bali, where he and Ray Adriansyah lead a multi-course, hyperlocal tasting-menu restaurant built around Indonesian biodiversity and seasonal sourcing. He was previously the chef and co-owner of Locavore, the Bali restaurant the duo opened and later evolved into Locavore NXT, with coverage noting he began his culinary career in the Netherlands before moving into star-rated kitchens and later working in Jakarta before relocating to Bali.
