The Path
Training at the San Francisco Art Institute gave Elizabeth Falkner an early base in making and seeing before she entered a kitchen. The first kitchen role was dishwasher at Cafe Claude in San Francisco, California, and that starting point matters: it places the work inside the full structure of service, not outside it. From there, pastry became the form of practice. In 1993, Falkner became Pastry Chef at Elka, Miyako Hotel, where the demands of precision and visual balance are built into the discipline. In 1994, she moved to Rubicon as Pastry Chef, continuing in kitchens that required consistency as much as invention. Ownership and authorship took clearer shape in 1997, when Elizabeth Falkner became founder / owner / chef at Citizen Cake in San Francisco, California, a role she held until 2011.
