Directing the assemblage of a historic Champagne house means carrying a house style across harvests without freezing it. Émilien Boutillat is cellar master at Champagne Bollinger. He was chef de caves at Piper-Heidsieck from October 2018 through 15 September 2026, and chef de cave at Rare Champagne from 2022 through the same date.

Boutillat joined Piper-Heidsieck in October 2018 at age 30, succeeding Régis Camus, who moved his focus to the Rare project. At Piper he directed blending and cuvée development and oversaw vineyard technology, including locally manufactured robots in the rows. Vitisphere records that he was also chef de cave for Rare Champagne from 2022. Bollinger's June 2026 appointment named him cellar master succeeding Denis Bunner.
