The old vines carry the weight of the domaine, and they give his White Burgundy its lineage and concentration. Growth is handled in the same measured way. “It’s grown since then, of course, there’s 7.5 hectares in production today, and I’ve another half hectare that I’ll plant over the next years but I’ll be happy to stay with 8 hectares – I’d rather double the quality than the quantity.” The scale stays personal and deliberately controlled, with the old parcels kept at the center. In the Mâconnais, that kind of discipline reads as a method, not a slogan.
