    The juice settles overnight before gravity carries it onward. Daniel Barraud, winemaker at Domaine Barraud in Vergisson, keeps that sequence close to the vineyard, while Julien Barraud, also winemaker here, now leads the direction of the cellar. The work belongs to a family estate whose first parcels in Vergisson were bought in 1905, and whose present tense is still Chardonnay, limestone, and the small decisions that make white Burgundy durable rather than loud.

    Daniel’s record at the domaine reaches back to 1979, when his work as co-runner and winemaker set the line between vineyard judgment and cellar restraint. Julien joined in 2006 and progressively took on winemaking direction, not as a break with that line, but as its continuation at the same address. The estate’s signature names, Les Crays, La Roche, and Sur La Roche, stay close to the slopes around Vergisson.     Chardonnay through limestone and time

After the overnight settling, the juice moves by gravity to barrel or tank, where alcoholic fermentation and malolactic fermentation take place naturally, without commercial yeasts or additives.

    The cellar sits in a village shaped by the Roche de Vergisson and Roche du Solutré, the twin limestone cliffs that rise above the vines like old reef made visible. Inside, the scale stays familial: small cellars, quiet work, bottles and barrels held in cool conditions, and a tasting room that points back to the vineyard rather than away from it. The room is not built around spectacle. It is built around the line from slope to press to tank.

    That restraint gives the place its texture. A flight here is vineyard-focused because the estate’s subject is vineyard difference, not cellar performance. Sur La Roche can carry the higher-slope energy of Vergisson; En France brings limestone and colored clay into another register; La Marechaude and Clos La Verchère add the feel of cooler ground and older-vine depth.
