The Path

At South College, Erika Flowers built the base that would carry into bar work: training, repetition, and the habits that hold a service together. From there, Turning Tables Bar Program Cohort III (from 2021) gave her a live setting to sharpen technique as a bartender, with Cane & Table in New Orleans extending that work through service, rhythm, and precision at the pass. At Compère Lapin in New Orleans, that progression resolves in the Bar Lead role. The title sits on top of the technical work: keeping a program steady, making judgment calls in service, and leaving room for experimentation without losing control of the room.

The Work Today

The bar at Compère Lapin is where innovative cocktails become the form of Flowers’s work. Erika Flowers approaches the section as a place where balance, aroma, texture, and presentation all carry weight; a drink has to read clearly before the first sip and still hold together after it. “Similar to cocktails, I love a dish that looks and smells as great as it tastes.” In Erika Flowers’s own words, the measure is sensory alignment, not garnish for its own sake. Look, smell, and taste sit in the same frame, and the drink only lands when those parts are in agreement. That is the practical shape of the bar program under Flowers: curiosity handled with discipline. At Compère Lapin, the work is built to feel considered from first glance to final sip.
