Erling Wu-Bower

Erling Wu-Bower is a Chicago chef, restaurateur, and chef-partner at Maxwells Trading in Chicago’s Kinzie Industrial Corridor. He previously spent more than a decade in leadership roles at One Off Hospitality, including avec, The Publican, and Publican Quality Meats, and later co-founded Underscore Hospitality with Josh Tilden in 2017. Maxwells Trading opened in late 2023 as Underscore Hospitality’s latest venture, and the restaurant’s menu has been described as blending Asian influences with deeply American traditions.
