In Their Words “We never completely empty the barrels, which allows us to incorporate a base of long-aged Calvados even into our youngest blends.” The logic here is continuity. By never fully emptying the barrels, the house keeps a reserve of long-aged Calvados in circulation, so even the youngest blends begin with older material already in place. It is a practical method of carrying depth forward without breaking the chain. “We oversee the entire process, from harvesting to bottling, using mainly bittersweet apples from our high-stem orchards.” The work is defined by control of the full sequence, from harvest through final bottling. Bittersweet apples from the high-stem orchards provide the main raw material, and the span from orchard to bottle shows a craft managed end to end.
