Her formal training at Université de Paris-Dauphine shows less as biography than as temper: structure, sequence, and a taste for processes that ask to be repeated cleanly. Since 2022, she has been co-owner here, a role that places her at the join between inherited practice and daily decision. The house describes the work in plain terms: Calvados Pays d’Auge made through traditional craftsmanship, including double distillation over wood fire. That sentence carries most of the discipline. Apples come in, cider becomes the base, the still fixes the spirit’s frame, and the cellar decides how much time and older material the final blend can bear. Old oak kept in motion
The house works from 27 hectares of apple orchards in the Pays d’Auge bocage, planted with high-stem and low-stem trees. Its named apples include Antoinette, Fréquin Rouge, Bisquet, Moulin à Vent, Bedan, Noël des Champs, Rambaud, and Petit Jaune, with bittersweet fruit from the high-stem orchards forming the main material Groult cites from harvest to bottling. The method continues in the aging cellar, where nearly 400 French oak barrels and vats hold Calvados at different points of age and structure. Roger Groult does not treat a barrel as a vessel to empty and reset. “We never completely empty the barrels, which allows us to incorporate a base of long-aged Calvados even into our youngest blends.” That perpetual blending keeps older spirit circulating through younger blends, a cellar habit based on continuity rather than display. The range makes that visible: Calvados 3 years old, Vénérable, Single Cask 25 years old, and Cask Finish Sherry each mark a different decision about age, cask, and finish.

The cellars have the temper of working rooms, not staged ones: moderate humidity, old oak, the quiet pressure of spirit taking on time. Nearly 400 barrels and vats give the space its rhythm, with casks moving from vessel to vessel only when the blend asks for it. Outside, the orchards sit in the Normandy bocage around Saint-Cyr du Ronceray, high-stem and low-stem trees carrying the raw material before the still house ever becomes warm. Inside, the cellar air holds apple, wood, and age in a slower register. This is an intimate place, rustic in its materials and precise in its habits. The craft does not need a raised voice here. It sits in the wood-fired still, the high-stem orchards, and the unfinished thread of Vénérable.
