The Climb
At Lycée Paul Hazard d'Armentières, Florent Ladeyn built his base on the sort of training that gives a kitchen its footing: repetition, discipline, and enough structure to support later deviation. The next step into finalist, saison 4 de Top Chef at Top Chef (2013) moved that work into public view, placing Ladeyn in a wider conversation without changing the underlying trade. As chef at Bloempot, Lille, he then had the room to turn that visibility into a defined kitchen stance, one built on clear decisions rather than display. That same line continues at Auberge du Vert Mont, where Ladeyn’s work has settled into a form that reads as accumulation rather than reinvention. The arc is straightforward: training, television, service, and the day-to-day pressure of running a kitchen. What it yields is a style that has been tested in public and then refined in the back-of-house realities that actually hold a restaurant together.
Today
At Auberge du Vert Mont, the work carries the mark of a chef who lets the kitchen stay legible. Florent Ladeyn’s cooking points toward place, but it does so through control rather than ornament: directness on the plate, balance in the construction, and enough restraint to keep the ingredients doing the talking. The result is a practice shaped by repetition and by the discipline of maintaining a point of view across service after service.
Signature
Florent's signature dishes include Brioche perdue glace au lait caramel and L’Estaminot. Those two dishes point to the range inside Ladeyn’s kitchen: one built from dessert language and the pull of richness, the other from a more grounded regional register. Taken together, they show a cook working with familiarity, texture, and recognition — dishes that are meant to register quickly, then stay with the diner by structure rather than decoration.
In Their Words “A primitive cuisine that is both raw and delicate, wild and accessible.” Read as working language, those lines place the cooking in a practical frame: northern setting, simple equipment, and a table built for use. Florent Ladeyn describes a cuisine that stays close to source and process, with enough force to remain direct and enough restraint to remain approachable. It is less an image than a method.
