Francesco Torcasio

Francesco Torcasio is an Italian chef from Calabria who became the executive chef of Chic Nonna in Dubai after joining the restaurant as head chef in 2023. He began working in professional kitchens in Calabria as a teenager, later built experience with Il Borro in Dubai and London, and was asked to join the opening team for Il Borro London in 2021. He is described in trade coverage as the culinary lead behind Chic Nonna’s Italian-focused menu, including modern interpretations of traditional dishes such as fregola al gambero rosso and its signature burnt-pasta style preparations.
