i. Biography
Before Francis Ang became Executive Chef of Abacá in San Francisco, his kitchen training ran through Gary Danko and Fifth Floor, two San Francisco addresses that sharpened his pastry discipline and savory control before they reached the plate at Abacá. In his work, Filipino recipes are handled as working material: preserved through memory, then recalibrated with local California ingredients and composed through indigenous Filipino, Malaysian, Chinese, and Spanish references into a contemporary restaurant register.
