By 1850, Frederick Henry Harvey was already in restaurants, and the work had the shape of rail discipline from the start. In 1862, he worked as a railway mail clerk on the Hannibal & St. Joseph Railroad, a post that kept him close to the daily mechanics of service. The public face stayed respectable, and consistency became part of the brand.
