From there, the move to John Tovey's Miller Howe country hotel in Windermere, Lake District as chef brought him into a more exacting kitchen discipline, where the work shifted from selling to composing, and from immediate response to structured service. The next stage came at Morston Hall in Morston, Norfolk, where Galton Blackiston was owner and chef until 2025.
