Formed in Brooklyn hospitality at Okonomi, George Padilla’s work has stayed close to the floor: service translated into a room built around Japanese food, drinks, and shared time together. In 2020, that experience carried into Rule of Thirds in Greenpoint, Brooklyn, New York City, where co-founding marked continuity as much as change.
