The Path
Boston University is the starting point in JT Vuong’s record, but the more telling education happens in line work: chef at the Yuji Ramen pop-up (2017–2019), then head chef at Okonomi in Williamsburg, Brooklyn (until 2019). Those roles place him in two different kitchen registers — one shaped by the speed and elasticity of a pop-up, the other by the tighter control and quieter demands of a more exacting room.
