Gilberto Cetina is a Mexican-born chef based in Los Angeles who learned to cook in his family’s restaurant, Chichen Itza, inside Mercado La Paloma. He took over as chef of Chichen Itza in 2010 and opened Holbox in 2017, where his seafood-focused cooking at Mercado La Paloma has earned major recognition including a Michelin star in 2024.
