i. Biography
Gilles Chabbert has been the winemaker at Domaine des Aires Hautes in Siran, Hérault, France since 1995, working a family property founded by his grandfather, who was first a livestock breeder. His approach has pushed the reds toward flesh and balance: punch-down extraction for structure, no fining or filtration to keep the wines unforced and intact, and enough restraint in the cellar to let fruit carry through to full maturity.
The Climb
Since 1995, Gilles Chabbert’s work at Domaine des Aires Hautes has been defined by continuity rather than reinvention. The estate began in family hands, with a grandfather whose first trade was livestock breeding, and that lineage remains embedded in the way the property is read today. Chabbert’s contribution has been a steady refinement of style: red wines shaped with a measured hand, built for balance and substance. Punch-down extraction gives the wines their depth and framework, while the decision to leave them unclarified and unfiltered preserves texture and keeps the fruit direct. The result is a house style grounded in control, where richness is carried by structure rather than weight alone.
Today
At Domaine des Aires Hautes, the cellar work remains focused on the same set of decisions: punch-down extraction, no fining, no filtration. Those choices keep the reds rounded and expressive, but also precise, with the kind of depth that comes from allowing the fruit to reach full maturity. Gilles Chabbert’s long tenure since 1995 has made him the constant through which the estate’s present identity is shaped, vintage after vintage, through a consistent set of technical choices.
Signature
Gilles's signature dishes include Orycte 2019 and Aires Hautes Réserve. Both sit within the same register as the rest of his work: dense, balanced wines with fruit allowed to ripen fully and a cellar hand that avoids unnecessary intervention. Read together, they point back to the family estate and the long practice behind it, where the style is carried by repetition, restraint, and the same structural choices year after year.
