Working in Grand Rapids at the Amway Grand, beginning in 1996, put Guillaume Hazaël-Massieux inside a grand hotel pace where discipline, timing, and precision matter every service. At Steelcase Corporation, the executive dining room chef role asked for polish and consistency, with every plate expected to land the same way, every time. At Restaurant Toulouse in Saugatuck, Michigan, beginning in 2001, Guillaume Hazaël-Massieux moved further into French-inflected cooking, with menus shaped by season, restraint, and confidence.
