i. Biography
Gustavo Sáez is a Chilean pastry chef and entrepreneur from Puerto Montt who built his career in high-level restaurants in Latin America and Spain, including Boragó, El Celler de Can Roca, and DOM. He was recognized as Latin America’s Best Pastry Chef by The World’s 50 Best Restaurants and later won the Maya Pastry Cup with the Chile team. He is associated with 99 Restaurant in Santiago and later founded Gustavo Sáez SPA / Gustavo Chocolates, focusing on pastry education and consulting.
