The Path
Training at Marywood University and Johnson & Wales University sits at the start of Hanna Kyle’s work in food and wine, but the throughline is practical: floor service, line work, purchasing, and beverage management. From 2006–2011 at Peter's Europa House, the work paired Food Server and line cook duties. That mix continued at Water wheel cafe and bakery, where Hanna Kyle was cook and server from 2010–2012, and at Stir Cooking School, where an assistant role from 2010–2013 added classroom-side experience to the mix. Management and buying followed the same progression. Hanna Kyle served as General Manager at Mill Market LLC from 2014–2015, then moved to Dean & DeLuca as Department Manager from 2015–2017 and Produce Category Manager and buyer from 2017–2018. In restaurant service, the role shifted into wine and dining-room leadership at Cookshop as Restaurant Manager and sommelier from 2018–2019, then at Lure Fishbar as sommelier and Beverage Manager from 2019–2021, and at Il Buco as Head Sommelier from 2021–2023.
