i. Biography
Brazil is such a diverse country," says Helena Rizzo, chef of Maní in São Paulo, and the line reads less as general praise than as a working principle. Born on December 6, 1978, Rizzo has built her practice around Brazilian ingredients, using contrast, overlap, and proximity as core tools rather than decorative effects. As a chef and restaurateur, she works the space between traditions: what meets, what resists, and what changes in contact.
The Philosophy "Our cuisine is like a patchwork quilt with a mix of influences that are similar but different; distant, yet always connected in some way," Rizzo says. The comparison is useful because it describes method, not mood. The pieces keep their edges; they are joined without being erased. In that frame, Brazilian ingredients are not a fixed category or a finishing note, but the base from which contemporary cuisine can move, cross, and return. Rizzo’s cooking treats Brazilian food as a field of relationships. One ingredient clarifies another. Distance can sharpen resemblance. A dish can stay rooted while still allowing for travel across influences. That is the working logic in her kitchen: not isolation, but relation.
In Practice As a restaurateur, Rizzo extends the work beyond the stove and into the room around the meal. The role demands attention to service, pacing, and the way a restaurant holds itself as a place of hospitality. In that setting, technique and experience are linked; the plate is only one part of the structure. "I love Japanese food and it connects well with northern Brazilian and Amazonian cuisine, so I like to bring the two together," Rizzo says. The point is not a broad fusion claim, but a precise conversation between traditions that can meet through texture, balance, and depth. The same approach carries through Arab flavours, another line of influence in her work, where the composition matters more than accumulation.
