    The cellar is organized around separate handling for variety and vessel. Under Henry Aloys Grosjean, Chasselas, Chardonnay, and Pinot Gris go into vats fitted with fermentation-monitoring devices, while Pinot Noir and Oeil de Perdrix go into oak casks ranging from 2,500 liters to 10,000–12,000 liters. Wood use is divided by cuvée and stage. Some Chardonnay and Pinot Gris cuvées ferment in 220-liter barrels. The portion of Pinot Noir matured in barrels is put into casks after malolactic fermentation, then rests there for 12 months.
