i. Biography
Cheese aging, in the Mons line, is market work, cellar work, and judgement by condition rather than formula. Born into a family of cheesemongers in Roanne, Hervé Mons built his practice around affinage: reading raw milk terroir, handling microbial development, and deciding ripeness through sight, touch, smell, and taste. “There’s nothing to be afraid of, I drove in the Paris-Dakar Rally for 20 years.” Hervé has said.
Training and Lineage
Affinage training here runs through Mons Formation, where Hervé Mons developed the technical base for cheese selection, care, and maturation. In 1983, the work moved into practice at Mons Fromager Affineur, where he began as a cheesemaker and affineur. Maison Mons became the house through which that cellar discipline, retail knowledge, and producer-facing selection were carried forward.
The Work Today
Maison Mons continues to work in the line between preservation and adaptation: aging cheeses, protecting raw milk character, and training cheese artisans in sensory control. Hervé Mons leads Maison Mons with attention to peak ripeness in each wheel, preservation of rare Salers-breed milk, and the revival of seasonal cycles. The named cheeses associated with the house include Brisilic, a festive cheese combining basil with Brie, and the 1924 Bleu, a mixed-milk blue cheese with a creamy paste.

Signature cheeses include Blue 1924: a fabulous blue cheese and Le castillon: a little crottin.
