Hervé This is a French physical chemist born in Suresnes, France, best known for co-founding molecular gastronomy with Nicholas Kurti in 1988 and for developing related frameworks such as culinary formulations and note-by-note cooking. He has worked with the Institut National de la Recherche Agronomique (INRA) in Paris and has been associated with AgroParisTech and the broader scientific study of cooking transformations.
