i. Biography
At a Ginza counter in Tokyo, sushi is treated as a problem of sequence and control: rice against ingredient quality, knife line against the grain of fish, and the tempo between chef and guest setting the pace of the meal. Since 2018, Hiroyuki Sato has built Hakkoku around that logic as Head Chef and chef-owner, serving 30 pieces of nigiri with cuts measured to the ingredient, timing kept tight, and a counter style meant to reduce distance rather than add ceremony. The result is direct and exact, with warmth carried through method instead of mood.
The Climb
Before Hakkoku, the work at Sushi Tokami in Tokyo (2013–2018) gave Hiroyuki Sato the platform to sharpen a disciplined approach. That period established the habits that now define his table: control, attention to detail, and a refusal to treat small adjustments as incidental. Since 2018, he has carried that discipline into Hakkoku as Head Chef / chef-owner, keeping the craft itself at the center of the operation.
Today
In 2018, Sato took over as Head Chef and chef-owner at Hakkoku in Ginza, Tokyo, where the 30 nigiri course is structured as a working relationship between chef and six guests, not just a sequence of plates. The pacing is part of the construction: each piece lands with attention to timing, and the meal moves at a shared rhythm rather than at a distance. His signature work also includes the Tossaki hand roll, a piece that fits within the same framework of clarity and restraint. The counter is kept casual and easygoing by design, reducing formality and pushing the experience toward unity between chef and guest. Sato thinks about the full setup around the food as craft: space, service, serving tempo, conversation, and knife work adjusted to each ingredient. On cutting, he is explicit about variation: "I want to be more thoughtful and change the cutting patterns depending on the ingredients." He extends that thinking to presentation as well: "I seek the best cut lines in order to make the ingredients look delicious instead of making cuts that are equally spaced and aligned to the same depth." The atmosphere around the counter follows the same plain standard: "I believe that the people around me who are involved with me being happy is enough."
