The Path
Television gave Hugo Leung Man To an early public platform in 2002, when he began as host of the programme Gourmet Secret Agent at Gourmet Secret Agent. The role put him on camera, but the more durable value was in the way it framed food: plainly, with enough authority to make conversation useful to viewers. From there, the work moved from presenting dishes to running a restaurant. Today, as managing director of Tai Wing Wah Restaurant, he is responsible for keeping a specific food culture legible and in circulation.
