i. Biography
Hailing from China, Ivan Yuen has built a career in large-scale kitchens where control, timing, and repetition matter as much as taste. His work in Dallas and Boston sits on top of a path defined by senior posts and Chinese Cuisine, with the weight of each role measured by how well service held together.
The Climb
Shenzhen University is where Ivan Yuen’s training began, before he moved into senior culinary posts that demanded steadiness as much as technique. That early base, followed by a series of leadership roles, points to a chef shaped for environments where consistency is the standard and every service has to land cleanly. At Baha Mar in Nassau, BS (2015–2016), he served as Executive Chinese Chef, a title that put both kitchen leadership and a defined culinary focus in the same frame. The role signals a chef working at the level where pace, coordination, and authority are part of the job description. From there, Ivan Yuen moved to Wegmans Food Markets in Rochester, NY, US (2016–2018) as Corporate Executive Chef/Chinese Cuisine. That step widened the scope of the work from a single kitchen to a broader operational remit, where standards have to travel with the chef and hold across a larger system. Since 2019, Ivan has been Executive Chef- Red 8 of Encore Boston Harbor by Wynn Resorts, and he is also Executive Chef of Stallen. Those appointments place him in settings where the demands of service, consistency, and kitchen leadership are daily work, not abstract goals.
Today
Today, Ivan Yuen’s career reads as a study in senior kitchen management built over time. From Shenzhen University to Nassau, Rochester, and Boston, the pattern is clear: roles that require control of pace, adherence to standards, and a practiced hand with Chinese Cuisine.
