Early in his career, Ivo Dubokovi moved through the world of ideas before settling into the more tactile, elemental rhythm of wine. But the path he would come to define was always elsewhere, in the cellars and on the slopes, where patience matters and time has its own language. Today, Ivo is winemaker of Duboković cellar, a role that places him at the center of a craft shaped as much by instinct as by discipline.

Where They Are Now

At Duboković cellar, Ivo works with Plavac Mali, a grape that carries the weight of its landscape and seems to ask for restraint as much as ambition. His own way of speaking about the work is measured, almost reverent: “The taste of pure terroir in the glass.” The phrase captures the philosophy behind his wines, a pursuit of clarity, place, and expression rather than ornament. It is a concise ideal, but one that implies a great deal of attention—careful harvesting, close listening, and the patience to let the character of the fruit emerge without haste.

Signature

Ivo's signature dishes include Medvid, Medvjedica, and Moj Otok. Each name reads like a marker on a personal map, tied to identity and memory as much as to the bottle itself. In Their Words “Wine is something to relish, and I really relish it. I am happy when I produce something that will be a pleasure for someone.
