Early in his career, Janos Wilder worked as chef at Gold Hill Inn in Colorado, an early post that helped shape the path ahead. Today, Janos is chef/owner of Janos Cooks and chair of the Tucson City of Gastronomy Board of Directors.

Those two roles keep him close to both the stove and the city’s broader food identity, with Southwest cuisine still at the center of his work. From 2010 to 2021, he served as chef at DOWNTOWN Kitchen + Cocktails in Tucson, Arizona, adding another long chapter to a career rooted in the same place where so much of his cooking took form. Even as the venues changed, his focus stayed clear: regional ingredients, careful technique, and a point of view that has remained consistent over decades.

Janos's signature dishes include poblano flautas with saguaro blossom syrup, Tamarindo Truffles, Dark Chocolate Jalapeño Sundae, and Lamb 3 Ways from the Heart of Mexico.
