Javi Martínez is the chef leading Restaurant Castell Peralada in Peralada, Alt Empordà (Girona), where the venue says he presents a seasonal gastronomic proposal rooted in traditional Catalan cuisine. He is the chef who assumed the kitchen after Xavier Sagristà and the head chef of the Michelin-recognized restaurant.
