Javier Goya

Javier Goya is a Madrid-based chef and restaurateur best known as the co-founder of Triciclo, which opened in Las Letras in July 2013 and became one of the neighborhood’s best-known dining rooms. Current official restaurant materials identify Triciclo as a project of Javier Goya and Javier Mayor, and newer reporting says Goya now runs the restaurant at the front of the house while remaining the chef associated with the venue. Coverage of Triciclo also notes that Goya previously worked in the kitchens of Casa Marcial before launching his own project in Madrid.
