Early work at the family distillery in Santiago Matatlán, Mexico, placed Javier Mateo inside the making of a family mezcal distillery (palenque) from 1979. The same rootedness still defines Mezcal Los Javis, where the distillery remains tied to the landscape and to practical knowledge accumulated over long years in the craft.

The Work Today

At Mezcal Los Javis in Santiago Matatlán, Oaxaca, Mexico, the distillery is run with continuity as the central task. As Maestro Mezcalero, Javier Mateo carries production, preservation, and the regular upkeep of a family way of making mezcal. The role asks for technical control, but also for the steadier obligation of keeping what was received legible in what gets handed on.

Signature

Javier's signature wines include Los Javis Tobala, Los Javis Espadin, Los Javis Salmiana - Tepeztate, Los Javis Arroqueño, and Los Javis Cerrudo Mezcal. Together, these names mark a house style grounded in place and family labor, each expression part of the broader identity of Los Javis and the craft it represents.
