Javier Mayor is the chef leader and reference behind Grupo Triciclo in Madrid, Spain. The work reads as a long apprenticeship across some of Spain’s more demanding kitchens before ownership arrived. In 2013, he joined forces with Javier Goya to open their own restaurant in Madrid, a project built from friendship, shared work, and the decision to make the place they wanted to eat in.
The Climb
Javier Mayor’s craft was built through a sequence of kitchens, each one adding pressure, repetition, and responsibility. He started as cook at Frontón de Tolosa, Guipúzcoa, then continued as cook at La Broche and cook at Pan de Lujo. The path moved on to cook at Las Rejas in Las Pedroñeras, Cuenca, then to cook at La Sucursal in Valencia, where pace and precision sharpened the discipline already in place. He later worked as cook at SantCeloni before becoming chef de cocina; mano derecha at DiverXO in Madrid, a role that marked trust as much as rank. Today, Javier is co-founder / entrepreneur of TriCiclo (since 2013), chef of Grupo Triciclo, chef of Villa Verbena, and chef of El Taller del Lago. The titles show a progression from a single Madrid opening to the wider group that formed around it.

In 2013, after years of friendship and working together in kitchens, Mayor joined forces with Javier Goya to open TriCiclo in Madrid. The project began without theatrics; it started from a practical question about the restaurant they themselves would want to eat in. From that premise, TriCiclo became the Madrid address that anchored the wider group. The opening was shaped by work as much as by intent. The early days were hands-on before they were polished, and the build happened alongside the cooking. In 2015, looking back on the start, he said, “Yes. We took part in the construction work so it would be cheaper for us; we had never knocked down walls or taken out rubble, but we did it; we painted, polished chairs, and did a lot of things we had never done before.” The timing mattered, too: “We were in 2013, in the middle of the crisis, and we got the neighborhood right.”
