Jean-Michel Carrette

Jean-Michel Carrette is the chef-owner of Aux Terrasses in Tournus, Saône-et-Loire, in southern Burgundy. He grew up in the restaurant, trained at the catering college in Poligny, and worked at La Tour Rose in Lyon and La Maison Troisgros in Roanne before taking over the family property in January 2005 after his father’s death. Aux Terrasses says the family restaurant had already earned a Michelin star and that he has retained it while developing an instinctive, creative cuisine rooted in local traditions.
