Jean-Paul Lair is the executive chef at Le Vallauris in Palm Springs, California, where he has been credited with evolving the restaurant’s food from traditional French cooking toward a lighter French-Mediterranean style over decades of service. He is having been born in Vichy, France, and as bringing experience from kitchens in both France and the United States to the restaurant’s long-running menu.
