i. Biography
Jean-Rémi Caillon’s cooking reads as grounded and finely drawn, with season and place kept in view and simplicity held to a precise standard.
The Path
Training at Verrières-en-Forez gave Jean-Rémi Caillon a base, then a run of kitchen posts broadened the line of his work. He served as chef at Hôtel de Ville de Crissier, then as chef at Château de Divonne, followed by chef at Shangri-La. He later continued as chef at La Chèvre d’Or in Èze-Village, adding another step to a path already defined by movement and discipline. Courchevel became the setting where that experience took on a clearer mountain register. Jean-Rémi Caillon served as chef at Kintessence (K2 Group) in Courchevel, chef at K2 Palace in Courchevel, and chef at Alpage in Courchevel, before becoming chef exécutif at La Maison Pinturault in Courchevel. Read together, those posts show a style built by accumulation: each kitchen sharpening the same priorities of precision, restraint, and attention to place.
The Work Today
Jean-Rémi Caillon puts it plainly: "This is a French, contemporary and precise cuisine. It is generously inspired by our mountain environment, combining that terroir with a few carefully selected noble products." The language is direct, and the cooking follows suit. The point is not effect, but clarity: a tight center, handled without slack. The same structure runs through his earlier Le Kintessence dishes. Forezan beet is set against smoked eel, lobster is paired with tartifles and fir buds, Tarentaise lamb is carried by turnips and agastache. These are not scenic Alpine gestures. They give the ingredients a working relationship on the plate, where texture, temperature, memory, and origin do the defining. The mountains are present as material, not motif.
