In Their Words The craft here is shaped by a market still wary of organic wine, even when the grapes are organic. Jean-Denis Perrochet points to years of mediocre winemaking and sloppy organic farming as the reason Swiss buyers learned to reject the category, and producers, in turn, grew cautious about naming it on the label. Perrochet also frames the work as continuity rather than correction. The previous generation, he says, did the best it could with the tools it had; the obligation now is to use current knowledge to improve what can be improved.
