Head Chef posts at 4th & Swift and Noble Fin (2014–2017) marked Jeb Aldrich’s rise through the kitchen with steady ambition. Those roles established a working profile defined by control, pace, and a voice that could hold up across different dining rooms. Since 2017, Jeb Aldrich has also served as executive chef of Clermont Hotel's still unnamed restaurant and rooftop bar, while continuing as chef of Switchback at Cataloochee Ranch. The two posts point to a career built across distinct kitchens, each with its own rhythm and demands.

The Work Today

At Switchback at Cataloochee Ranch in Maggie Valley, NC, Aldrich works inside a defined regional vocabulary. Southern Appalachian fare and European Alpine influence set the frame; Appalachian favorites, French technique, and locally grown produce give the menu its shape. The result is cuisine that reads familiar first, then precise. "The thing that got me was that the restaurant would be part of creating an overall experience for the guest, along with the whole property," Aldrich said. The line fits the work: food conceived as one part of a larger hospitality structure, not as a standalone event.
