A kitchen inside a mountain house

At the pass, the kitchen at Cataloochee Ranch in Maggie Valley belongs to a ranch house rather than a city dining room, and the work is shaped by that. The property began in 1933 with forester Tom Alexander and Judith Barksdale Alexander, the first commercial tourism venture created to serve visitors to the then-new Great Smoky Mountains National Park. The original ranch operated in the Cataloochee Valley as a trout fishing, horseback riding and pack-tripping resort, on farmland leased from the National Park Service.

In 1938 Tom Alexander bought the present property on Fie Top, just across the Cataloochee Divide from the original, and from 1939 the ranch grew there as a working sheep and cattle farm with guest rooms, local employees, trout water, horses and pack trips. The kitchen now cooks inside that line of mountain welcome, not as nostalgia, but as a station responsible for pace, flavor, team tone, and the coherence of the table.

A ranch program measured in land

The kitchen works within a place whose scale is physical before it is decorative. Cataloochee Ranch sits in a 5,000-foot-high mountain setting on Fie Top, with the wider property now held across 825 acres.

That outside life matters to the table. Guests move through horseback trails, fly-fishing water, hikes, archery, axe throwing, and a custom ropes course with zip lines and creek crossings. Leatherworking, printmaking, and watercolor classes sit beside that outdoor program, with a pottery and ceramics studio planned. The food has to meet people coming in from weather, saddle, trail, and studio, then return them to the house with enough warmth and control to feel of the mountain rather than apart from it.

Fireplaces, timber, and the floor

The room carries stone, reclaimed wood, fireplaces, and the low quiet of a house built to look outward. Cataloochee Ranch is not arranged as a single sealed resort block; the main ranch house, lodge, and individual cabins preserve the feeling of a working property adapted to hospitality. The floor moves between rustic material and Relais & Châteaux polish, with rich textures and indoor-outdoor lines that keep the Smoky Mountains in view.

David and Annie Colquitt, the husband-and-wife operators behind the recent transformation, brought the ranch into a more refined register while leaving its mountain character legible. That restraint matters. In a place with panoramic ridgelines, fireplaces can do more than décor, and a plate can sit beside wood, stone, and weather without needing to explain itself.

Conservation as part of the method

The ranch’s strongest act of continuity may be what it chose not to build. In the 1990s, Tom Alexander worked with the Southern Appalachian Highlands Conservancy to place 222 acres on Hemphill Bald into conservation easement, reducing the land’s value by 78% and blocking future development. Alexander, Judy Coker, and Alice Aumen later placed five additional sections into easements with the same organization.

For a cook, that kind of boundary changes the station. The view is not a backdrop hired for the dining room; it is protected ground, held through legal and family decisions over time. The kitchen works inside that inheritance now, with Fie Top, Hemphill Bald, and the ranch house setting the measure around the plate.
