Jerôme Allaguillemette

Jérôme Allaguillemette is a French-born bar director and mixologist based in London who serves as Head of Bars for Caprice Holdings. Having joined Caprice Holdings in 2015 to launch Sexy Fish in Mayfair as head bartender and later bar manager, he one of the world's largest collections of Japanese whiskies and led the venue to win Best International Restaurant Bar at the 2022 Tales of the Cocktail Spirited Awards. Since October 2021, he directs multi-site beverage innovation and bar programs across global locations including London, Miami, Manchester, and Dubai.
