Dohyung 'Demie' Kim

Dohyung 'Demie' Kim is an South Korean bartender and co-founder of Zest in Seoul, internationally for pioneering circular, zero-waste mixology and highlighting local Korean ingredients. He previously honed his craft over five years at Woo Bar at W Seoul Walkerhill and served as head bartender at Alice Cheongdam before launching Zest in December 2020. Under his leadership, Zest achieved global acclaim, ranking No. 2 on Asia's 50 Best Bars and No. 9 on The World's 50 Best Bars, the same year Kim was awarded the Altos Bartenders' Bartender Award.
