At Pennsylvania Culinary Institute, John Harris picked up the technical base that later carried through a sequence of kitchens built around French discipline and Italian influence. The line from Café Allegro in Pittsburgh to Spiaggia in Chicago, then to sous chef at Bayona in French Quarter, New Orleans, reads as a study in repetition and adjustment: different rooms, same demand for control, pace, and palate. Apprentice work at Amphyclese in France and Le Pre Catalin in France extended that training into the traditions that still shape his cooking. The pattern is clear enough: each stop sharpened the same set of habits—precision, adaptation, and a sense of what holds. Today, John is chef / owner of Lilette (since 2000) and chef / owner of Bouligny Tavern (since 2010). Those roles keep him close to the work at both the pass and the business level, where authorship has to survive service.

At Lilette, John Harris works in an imaginative French and Italian-inspired register that favors continuity over novelty.
