John-Vincent Troiano trained at Humber College before moving through a formative stretch of kitchens that tightened both technique and judgment. At Kaiseki Yu-zen Hashimoto in Toronto (2009–2011), the apprenticeship asked for discipline and repetition; at Noma in Copenhagen (2011) and Benu in San Francisco (2011), stagiaire work added range and pressure. Across those rooms, the throughline was clear: restraint, precision, and ingredients allowed to read cleanly on the plate. Responsibility widened when John-Vincent Troiano became Head Chef at Tutti Matti in Toronto (2015–2017).
