At Fortitude Bakehouse in Bloomsbury, Jorge Fernandez’s work reads as bakery leadership built on repetition, control, and a clear point of view. The shop he founded in 2018 extends the same precision that has marked his career from the start, with the chef role carrying both the daily discipline of service and the longer task of shaping a kitchen identity that holds. Before that, the pace of The Monmouth Coffee Company in Borough gave Fernandez an early grounding in service rhythms that London rewards: consistency, warmth, and standards that stay visible in the room and on the pass. That experience fed into Fernandez & Wells in Soho (2007–2017), where he worked as founder and head chef through a decade in one of the city’s most closely watched dining neighborhoods. The name Fernandez & Wells became tied to his leadership there, and the Soho years remain a clear marker of his ability to build a place with its own register. Today, Fortitude Bakehouse (since 2018) carries that same through-line.
